Hummus is packed with plant-based protein and it’s a popular dip in the middle east. Basic hummus is made from chickpeas, olive oil, tahini sauce, lemon juice and garlic. You can choose to get creative and try out other flavors like red pepper hummus, black bean hummus or sweet potato hummus with this recipe.

Flour tortillas or fluffy pita wraps hold everything in place. Store the tortillas at room temperature in a tightly sealed bag to keep them soft and avoid cracking. The shelf life for flour tortillas is up to 3 weeks.

Spinach is a great source of iron, fiber and a variety of minerals. It also helps to insulate the wrap from getting too soggy which makes it easier to take backpacking.

Red bell peppers are filled with vitamin C and add a juicy crunch. They’re also packed with antioxidants contributing the the healthy factor of this meal. 

Red onion is one of our favorite ingredients to include in recipes. Onions are inexpensive, simple to store and extremely flavorful. Just a few slices of onion will leave you satisfied.

Goat cheese is an optional ingredient if you have a refrigerator or cooler to keep it. The tart flavor stands out among the nutty hummus making the wrap pack a punch.

Vegetarian hummus wraps to make for a campsite lunch or in the confines of an RV or camper. This recipe uses simple ingredients with no cooktop required!

Ingredients

  • 1 ½ cups hummus of choice
  • 4 8” flour tortillas
  • 2 cups spinach
  • 1 red pepper, sliced thin
  • 1 small red onion, sliced
  • 2/4 cup goat cheese, crumbled
  • salt and pepper to taste

Instructions

  1. Divide the hummus between the tortillas, spreading almost
    to the edge.
  2. Layer spinach on top of the hummus.
  3. Top with a quarter of the veggies and sliced onion. Crumble
    cheese on top, then season to taste.
  4. Cut in half to serve.
