You can choose to get creative and try out other flavors like red pepper hummus, black bean hummus or sweet potato hummus with this recipe.
Flour tortillas or fluffy pita wraps hold everything in place. Store the tortillas at room temperature in a tightly sealed bag to keep them soft and avoid cracking. The shelf life for flour tortillas is up to 3 weeks.

- 1 ½ cups hummus of choice
- 4 8” flour tortillas
- 2 cups spinach
- 1 red pepper, sliced thin
- 1 small red onion, sliced
- 2/4 cup goat cheese, crumbled
- salt and pepper to taste
- Divide the hummus between the tortillas, spreading almost
to the edge.
- Layer spinach on top of the hummus.
- Top with a quarter of the veggies and sliced onion. Crumble
cheese on top, then season to taste.
- Cut in half to serve.
